honeycomb

A while back my uncle gave us a jar of honey, filled with entire slabs of honeycomb, from a friend's farm. It's been occupying space in the cabinet waiting for me to research what to do with it. I had tried chewing whole honeycomb as a child, but I didn't like the waxiness. Today I consulted the Internet, to find out what people do with whole honeycomb.

A lot of people do like to chew it whole. The waxiness doesn't bug everyone so much. An acquired taste, perhaps.

Another known option is to make honeycomb ice cream. If only I had known that before Baitcon! Well, MAYBE I won't use it up by next year, and we can try it then.

The winning application seems to be to spread it on warm toast (or similar substrate), usually along with butter or cheese. The warmth of the toast softens the honeycomb, making it possible to spread. The texture of the bread hides the waxy texture of the small amount of wax, making it tolerable.

I tried spreading some honeycomb on plain toast. The honeycomb is brittle, and breaks up easily with the use of a butter knife, and thus it really does spread pretty well. Indeed, with just a little wax on top of plenty of bread, the waxiness was a whole lot less offensive than a straight chunk of honeycomb. Even the little flecks of wax that I found in my teeth afterwards didn't bug me. The flavor of the honey was, of course, wonderful.

Based on the success of this experiment, I think it will also work well to put a chunk of honeycomb into hot cereal such as oatmeal, cream of wheat, or grits, and mix it in.
