Here's a way to use some zucchini

3 1/4 whole wheat flour
1 1/2 teaspoon salt
1 teaspoon nutmeg
1 teaspoon cinnamon
1/4 teaspoon cloves
1/4 teaspoon allspice
1/4 teaspoon powdered ginger
2 teaspoon baking soda
2 cups sugar
Wet ingredients:
1/2 cup veg. oil
1/2 cup applesauce
4 eggs, beaten
3 cups grated zucchini
juice of one lemon
Other:
1 cup pecans
non-stick spray
Preheat oven to 350dF.
Combine dry ingredients in a large bowl.
Combine wet ingredients in another bowl.
Mix wet and dry stuff together, then fold in the nuts.
Spray 2 loaf pans with non-stick spray and pour batter in.
Bake about 1 hour, until a knife comes out clean.
