4 oz. neufchatel 1 stick butter 1 1/4 cups dark brown sugar 2 eggs 1 cup canned pumpkin 1 3/4 cups whole wheat flour 1 teaspoon baking soda 1/4 teaspoon baking powder 1/2 teaspoon salt 1/2 teaspoon ground cinnamon 1/4 teaspoon ground cloves 1/2 cup chopped walnuts (optional)
Preheat oven to 350 degrees F. Grease one 9x5x3 inch loaf pan. Cream neufchatel, butter,salt, and sugar together well. (the stand mixer works well for this) Beat in eggs one at a time until blended. Mix in pumpkin. In another bowl combine flour, soda, baking powder, cinnamon, cloves. Stir until thoroughly mixed. Add walnuts. Pour liquid ingrediants in all at once. Stir just enough to moisten. Turn into greased 9x5x3 inch loaf pan. Bake at 350 degrees F for about an hour. Check doneness with toothpick.
