Adventures in food, maybe
Feb. 27th, 2015 01:38 pmTomorrow's potluck will feature yummy spicy food. (Sophia's comment: "Those words don't go together." I shall not be bringing her. She can go have pizza or hamburgers with Grandma.)
I recalled that I used to enjoy dhokla from a snack shop in New Delhi. It was spicy the way they prepared it: with a mess of pickled green chilis on top. (Pickled in the Western sense of the word, i.e., soaked in vinegar, I believe.) Reading the descriptions, I think my favored snack was actually khaman, made with mostly chickpea flour, not actually dhokla, which is more rice flour than besan.
Maybe I will try making this? First step is a trip to an Indian grocer, to get besan and all kinds of weird things like Eno. Then to figure out how to steam a cake pan with what I have in my kitchen...
