Yum! I've never roasted a goose. How does prep compare to a roast chicken or turkey?

The short form is it's much more like duck, with even more fat. The trick is to drain enough fat while retaining moist flash and a crispy skin. I can attest that the mission was accomplished and hope to hear the technique details.

Sounds very yummy. I've been thinking about trying to make a goose, but I'm not sure if I want to deal with all the fat.
