Well, they're really warm and generally waterproof. I'm partial to snowboarding-style gloves, which have a big wide cuff that goes over the jacket sleeve.
Ditto to ceo You want waterproof gloves, since one fall will cause much snow to end up on the gloves. Wet fingers cause frostbite, which is Not Fun (I have first hand experience!).
If it's *too warm* out for the heavy gloves, I've skiied with thin nylon/silk glove liners, and attached the ski gloves (via their little hook) to my jacket. Wear the gloves up on the lift where it's cold, and take off when skiing (wearing the liners) if your hands start to sweat. If the liners get wet, you still have dry gloves to avoid frostbite.
Ski Gloves vs Ski Mittens: YMMV. I prefer mittens, because my personal belief is that mittens are warmer than gloves, and I can jam the mits into my ski pole handles (I've got wraparound ski pole handles, which are hard to find nowadays).
